Super easy, super fast, and super tasty - one of those quick lunches or dinners that makes you feel GOOD after eating it. I call it that 'vitamin rush' - what eating good salmon always does. This dish combines Japanese udon noodles, baked wild Alaskan salmon, garlic, ginger, tamari, sweet chili sauce and, yes, corn. Many recipes ask for snap peas but frozen organic corn is a great sweet subsitute, especially in the off season like we're in right now!
