Pizza: Spinach & Feta



Craving spanakopita but not confident about the sheer amount of calories (and cholesterol) involved in butter (even vegan) and phyllo?


Grab a homemade cornmeal pizza crust you made then threw in the freezer weeks ago, saute up some sweet onions, garlic, baby spinach leaves and sprinkle in some fresh herbs from the garden, take off the stove and stir in some Samish Bay organic feta made a few miles from here....and you've got the basics for a good vegetarian pizza.


But to make it just THAT much better? Grab a package of Miyoko's organic vegan mozzarella, slice it up, and top the pizza with that so when it all bakes, you get this beautiful smokiness to bite into with none of the dairy. Someday I'll find an organic vegan feta that will bring this from reduceatarian to vegan, but in the meantime? This is a damn good start...and tasty as all get out...
