Peach & Tomato Salad w/ Prosciutto & Manchego


Talk about YUM!


I just harvested a bowlful of San Marzano tomatoes from the garden and picked up some local organic peaches and combined them to make this gorgeously colorful Peach & Tomato salad, topped with torn prosciutto, shaved Spanish manchego cheese, arugula and nuts. With an easy homemade mustard vinaigrette, it was the PERFECT light dinner on this beautiful summer's day.
