Utter comfort food. Dry-fry the tofu in a bit of arrowroot, then toss it with a seriously good homemade orange sauce, using the juice NOT from a carton but the actual fruit (look ma, it's got zero packaging AND 100% compostable!) and other basics like tamari, rice vinegar, ginger and sesame seeds, and serve it on a bowl with dark leafy greens and coconut rice (for me, that's cooked up on the stovetop with a 2:1 ratio of broth and coconut milk to jasmine rice for this one) - easy peasy, no rice cooker or 'instantpot' required....and freakin' delish.
