Homemade Bagels


Making bagels is truly a treat...not only are they fun and easy to make, they are what I consider "dessert bread". At a touch under 250 calories per bagel, they are something I don't make a heck of a lot...because they are SO good. I mean, SO SO good. Today I decided to make them as a treat for my honey (hence why half of them are topped with kosher salt, as I'm a plain or onion-bagel type o' gal), and honestly because I was trying out this vegan cream cheese and wanted to get it used up as while it's good, I've found a new recipe for a homemade schmear I'd love to test out.


Anyhow, they're literally faster to make than loaf of sourdough by a long shot, and beyond adding a little sugar (I used honey) and egg, not all that different in ingredients. Make it, knead it, let it rise, shape it into bagels, boil it, bake it then brush it with egg wash before - if you desire - topping it with things like salt, sesame seeds, poppy seeds, et al., then popping it into the oven for 15 minutes.


I cannot WAIT to have another one for my brekkie tomorrow with fresh duck egg and a li'l slice of bacon as a serious treat...
