Harvest: White Corn!


Holy crap! We have corn!


While it's ordinarily not something we grow, the reason behind that is because I tried multiple times in my first backyard garden in the Rose City and it would grow nice and tall...but the actual corn would never finish up. Maybe the growing season, maybe they weren't pollinating each other well, I dunno...but here out in our back alley in the short raised bed I constructed from an old bedframe a neighbor had dumped, with multiple straps around it to prevent the 7'+ stalks from crashing down after the first rando rainstorm came this summer? It seems to have worked. Kudos to my husband for taking on the self-education on the little details about pollination, and harvesting as well. We had a really good layer of duck straw on them so they didn't require nearly as much watering as the books say, and they definitely loved the sun. Plus...rabbits don't care about 'em! So while we couldn't do the '3 Sisters' because the feral rabbits out there DID take advantage of the cukes I'd planted alongside, our 7 or 8 stalks out there each have a few ears of sweet white corn. YUM!


So. Crazy. We'll be putting these first two on the grill tonight as the evenings have gotten brisk to put it mildly and topping it simply - with vegan butter, homemade vegan cashew/lemon mayo and cotija cheese.
