Since I'm still working on getting my husband to embrace the humble eggplant after his own unfortunate experience with it many years ago, I have fallen in love with this incredibly easy recipe to make just one serving, I found on my MyFitnessPal app (one that won't allow me to link it since it's a members-only access dealio) and is nearly oil free as a healthy bonus... basically you cut an eggplant lengthwise, cut some crisscrosses in it like a tic-tac-toe board, pop it in the microwave for 7-8 minutes, brush a wee bit of olive oil on it, broil for 5-10 minutes, then top with marinara, goat or mozzarella (or a good quality vegan substitute), breadcrumbs and a sprinkling of either parmigiano-reggiano or nutritional yeast and pop it back in the broiler for a couple minutes til it's all nice and browned.
It's pure heaven I tell ya...and coming from someone like me who's made eggplant dishes that taste like crap in the past? Trust me on this one. it's also super low in calories and with delicious organic (and minimally processed) vegan options, it's easy to go reduceatarian on the ingredients or completely without any animal products.
This is pure comfort food, y'all.
