Cardoon

Sweetheart, there is nothing more exciting than when my husband calls out to me, "hey babe the cardoon is blooming!"...

I've yet to ever prepare it's stalks for eating, as I'm far too addicted to letting these massive thistles go to flower and watching the bumblebees and other pollinators go nuts on them, rolling about in the pollen and even taking naps in there at times. If I had room for an entire wall of them, that's what I'd do...so in the meantime, enjoy the little video I snapped of one of our morning visitors...
