I'm so glad I decided to give organic tempeh another try! While we don't eat a ton of it, every once in a while I like bringing something new into the mix as a meat substitute that's still organic and minimally processed (no fake meat in our household, y'all), and this time with the leftover homemade BBQ sauce I had in the fridge, I grabbed this recipe from Shane & Simple and ran with it, subbing tamari for soy sauce and serving it bowl-style with some homemade polenta made with a batch of veggie stock I brewed up last night, and some greens from the garden (not as many as I hoped for as our summer greens are now mostly in aphid mode and going to the ducks, while I wait for the recently planted fall greens to get big enough to enjoy - the blessing of having a mild summer here in the Valley). CRAZY good.
PS - as a note, I don't refer to them as 'ribs' as the recipe's creator does. They're not ribs, and I reserve that name for my rarely-eaten but still beloved pastured pork baby back ribs...but these are definitely tasty AF in their own way, and I personally like to smash 'em up in the polenta and greens and eat them all together. Hella good...
